About the Owner & Chef
Noi was born and raised in Changari in North Thailand, where at age 20, she married her husband, Arthur Bartolomeo, and at 21, she had her 1st of two daughters, Cynthia. They moved to Japan for a couple of years for Arthur’s engineering job. After their time in Japan, they went through the immigration process in New York. Moved to Connecticut in 1978 to live with her husband’s family. Two years later, they purchased a home in Long Island where they had their second daughter, Darlene.
Noi was tired of being a housewife, so she learned English from self-studying, watching soap operas and listening to popular music at the time. She worked three jobs; taxi driver, seamstress, and janitor. All the while, she was having fun experimenting with cooking and honing her culinary skills. She eventually co-owned 4 Thai restaurants, one in Queens, NY, another in Manhattan, and 2 in Long Island, introducing Thai cuisine to the area. Years later moved to Florida to retire, but once you meet Noi, you will quickly learn that she can’t sit still for long.
She ended up owning a restaurant in Clearwater, Florida, until a hurricane caused some damage. She retired, this time for good. UNTIL she gets a call from a friend that needs help getting their restaurant started, after getting that restaurant started, Oum calls Noi, she needs a chef and asks her to stay for two years. Noi ended up owning Little Ninja Thai Café in 2020.

History of Thai Food

Thai foods are one of the most popular cuisines worldwide, but what makes Thai meals so well-liked? Where did it originate from?

Thai food is straightforward yet a brilliant combination of Eastern as well as Western influences sympathetically incorporated right into that je ne sais quoi. Sour, pleasant}, salted, bitter, and also spicy flavors collaborate to make each meal come to life. Thai food differs {depending upon the location} of Thailand the recipe stems from. These areas consist of the north, northeast, southern as well central.

Historically, marine animals, plant as well as natural herbs} were prominent components included in many of their meals. Significant amounts of meat were mostly avoided thanks partially to Buddhist history. Instead, strips of meat were flavored with natural herbs as well as seasonings, or meat was cooked or roasted and afterward shredded.

Conventional Thai culinary included grilling, baking, or stewing. Nonetheless, the location that is currently Thailand, Laos, Burma (Myanmar), Cambodia, as well as Vietnam was settled by the Chinese approximately 1,400 hundred years earlier. With the movement of the Chinese right into Southeast Asia, frying, stir-frying as well as deep-frying of food ended up being a lot more prominent methods. Various other cooking influences from the 17th century onwards consist of Portuguese, Dutch, French as well as Japanese.
